EVO Olive Oil: from the producer directly to the consumer

For three generations, Mipa Agricola, of the Ruberto family, has been cultivating olives and transforming them into high-quality EVO oil with care, dedication, tradition, and innovation.

In the production of our six distinct EVO oils, we pay particular attention to cultivation processes, minimizing and even eliminating the use of chemical products. We also focus on selecting the best cultivars (types) and olives, sourced exclusively from our own lands.

We take great care in every step of our oil extraction process. The oil is extracted strictly through cold pressing and using only mechanical methods, ensuring that the prestigious organoleptic qualities of the olives remain intact.

Additionally, we do not remove the pruning residues from the fields. Instead of resorting to the usual, environmentally harmful practice of burning, we opt for field shredding – a more costly yet sustainable choice. This approach offers two major benefits: it respects the environment by eliminating atmospheric emissions and contributes organic matter to the soil, a completely natural byproduct.

Thanks to these eco-friendly agronomic practices, which prioritize both food safety and environmental sustainability, the entire company is undergoing organic certification. Our crops follow organic principles, with a certifying body overseeing compliance.

Furthermore, irrigation for our crops is powered by green electricity generated from renewable energy sources, in full respect of the environment.

The meticulous care dedicated to cultivation techniques and the careful selection of varieties and harvested drupes allow us to differentiate our oils into distinct types.

Non solo riutilizziamo i sottoprodotti come fertilizzanti naturali per i nostri campi, ma operiamo in un continuo, completo e complesso ciclo virtuoso

L’Economia Circolare della Mipa Agricola permette di sfruttare al 100% ogni risorsa generata dall’oliveto, anche quelle apparentemente più irrecuperabili, evitando ogni tipo di spreco, nel pieno rispetto dell’ambiente e con un basso impatto globale.

Si parte dagli oliveti, subito dopo la raccolta riutilizziamo le foglie di ulivo per produrre una birra artigianale ricca di polifenoli, dal potere antiossidante, con molteplici benefici sull’organismo e dal gusto fresco e deciso.

Dalle foglie vengono realizzati anche tre tipi di liquori artigianali, arricchiti con polifenoli per promuovere il benessere umano.

Le nostre olive vengono invece utilizzate per offrirvi sei diversi tipi di oli EVO.

Il processo di molitura da’ poi origine alla sansa, dalla quale estraiamo del nocciolino (nocciolo delle olive frantumato), che viene riutilizzato come combustibile nelle stufe e nelle caldaie per il riscaldamento.

La sansa così ripulita viene riportata nei nostri impianti di digestione anaerobica, per la produzione di energia elettrica (utilizzata nelle abitazioni e nelle industrie delle città) e di biometano (utilizzato per l’autotrazione e per le industrie).

Al termine del processo di digestione anaerobica, il prodotto che residua viene denominato “digestato”. Si tratta di un fertilizzante organico, un prodotto ricco di elementi nutritivi e sostanze organiche che le piante degli oliveti hanno assorbito dal suolo per produrre olive ma non utilizzati, poiché non necessari, per la produzione di olio, birra, energia e metano. Questo sottoprodotto, ricco e 100% naturale, invece di essere disperso, ritorna al punto di partenza: negli oliveti.

E si riparte con un nuovo ciclo virtuoso…

Not only do we reuse by-products as natural fertilizers for our fields, but we also engage in a continuous, complete, and complex virtuous cycle

Mipa Agricola’s Circular Economy allows us to fully harness every resource generated by the olive grove, even those that seem most difficult to recover, eliminating waste while ensuring minimal environmental impact.

It all starts with the olive groves. Immediately after harvest, we reuse the olive leaves to produce a craft beer rich in polyphenols, known for its antioxidant properties, numerous health benefits, and a fresh, distinctive taste.

The leaves are also used to create three types of craft liqueurs, enriched with polyphenols to promote human well-being.

Our olives are used to create six different types of EVO oils.

The milling process then produces pomace, from which we extract the pits (crushed olive stones), repurposing them as fuel for stoves and boilers for heating.

The cleaned pomace is then sent to our anaerobic digestion plants, where it is used to generate electricity (for homes and industries across cities) and biomethane (for transportation and industries).

At the end of the anaerobic digestion process, the remaining product is called “digestate.” This is an organic fertilizer, rich in nutrients and organic substances that the olive trees absorbed from the soil to produce olives but were not needed for oil, beer, energy, or methane production. This nutrient-rich, 100% natural by-product is returned to where it all began: the olive groves.

And the virtuous cycle begins anew…
